Pan Roasted Cod w/Vegetables

INGREDIENTS
1 large cod fillet
2 shallot, finely chopped
2 cloves of garlic, halved
1/2 lb of fresh green beans, halved
10-12 small fingerling potatoes, halved
3 carrots, peeled and chopped
2 lemons
1/4 cup white wine vinegar
1/4 cup of fresh parsley, roughly chopped
1 tablespoon fresh thyme, finely chopped
olive oil
salt & pepper to taste

PREPARATION METHOD

  • Preheat your oven to 400F and then start prepping the veggies.
  • Peel carrots and chop them into ¾ inch pieces, cut potatoes into similar size chunks, halve a few shallots, halve some fresh garden green beans, and any other veggies you prefer. Add your veggies to a large, parchment-lined baking sheet.
  • Whisk together olive oil, lemon juice, white wine vinegar, chopped garlic, thyme, salt, and pepper in a small bowl, and pour half of the mixture on top of the veggies and toss them to coat well.
  • Place the baking sheet in the oven for 15-18 minutes.
  • Then remove the pan from the oven and make room in the middle to add the cod fillets to the pan. Brush the remainder of the lemon dressing over the top of the fish and season. Place the pan back into the oven for 12-15 minutes.
  • Remove the pan from the oven, and squeeze some lemon juice on top and garnish with fresh chopped parsley and enjoy!
