
HONEY GARLIC SCALLOPS KABOBS
INGREDIENTS
1 bag of Bristol Hokkaido Sea Scallops
6-8 halved sweet mini peppers
1 chopped zucchini
1/4 cup of chopped fresh chive
1/4 cup of chopped fresh parsley
1 tbsp of honey
1 tbsp of smoked paprika
2 tbsp of melted butter
PREPARATION METHOD
- Whisk melted butter, lemon juice, honey, garlic, salt and pepper in a bowl or dish.
- Be sure to pat dry the scallops, and add them to bowl or dish for a quick marinate.
- Chop your vegetables thin enough so they cook quickly and skewer the scallops and veggies to make your kabobs.
- Preheat your grill and add your kabobs once the grill is hot. Grill 2-3 minutes per side and brush with any extra honey butter.
- Finish with a squeeze of fresh lemon and add garnish with chives and parsley.
